Pink Oyster Mushrooms are a bit more fragile than their other oyster counterparts. The flesh of the mushroom is thin, yet still retains its meaty texture when cooked. It should also be noted that they smell a little pungent prior to cooking. This is normal. The flavor can be described as bacon or ham-like with a succulent texture. The meat-like flavor makes this mushroom a prefect meat substitute.

  • Mushrooms need to be able to "breathe" so that they stay fresh. All mushrooms should be stored in the paper bag or cardboard container you receive them in. If you need to separate into smaller amounts, use an open plastic container and put a double layer of paper towels on the top and bottom of the mushrooms.

They should be stored in the crisper drawer or as close to the bottom of your refrigerator as you can. They may freeze on the upper shelves.

Don't worry if they do freeze. Most mushrooms can be frozen and thaw out just fine. That is an option for longer term storage.

Mushrooms can also be dehydrated for long term storage.
