The Mother of Pearl Oyster grows as a core that then splits off into many smaller stems and caps. The stems are soft and a great texture for eating. It is a fantastic choice of oyster mushroom. The caps are mainly white, with a hint of blue that is reminiscent of mother of pearl.

  • Mushrooms need to be able to "breathe" so that they stay fresh. All mushrooms should be stored in the paper bag or cardboard container you receive them in. If you need to separate into smaller amounts, use an open plastic container and put a double layer of paper towels on the top and bottom of the mushrooms.

They should be stored in the crisper drawer or as close to the bottom of your refrigerator as you can. They may freeze on the upper shelves.

Don't worry if they do freeze. Most mushrooms can be frozen and thaw out just fine. That is an option for longer term storage.

Mushrooms can also be dehydrated for long term storage.
