Lion’s Mane mushrooms grow in small to medium-sized, compact, clusters. They average 10-25 centimeters in diameter. When cooked, Lion’s Mane mushrooms are tender and meaty with a mild, nutty taste and a sweet and fragrant seafood-like undertone, similar to lobster or crab making it perfect to sauté and eat on it’s own. It is one of the best substitutes for individuals that are allergic to shellfish.

  • Mushrooms need to be able to "breathe" so that they stay fresh. All mushrooms should be stored in the paper bag or cardboard container you receive them in. If you need to separate into smaller amounts, use an open plastic container and put a double layer of paper towels on the top and bottom of the mushrooms.

    They should be stored in the crisper drawer or as close to the bottom of your refrigerator as you can. They may freeze on the upper shelves.

    Don't worry if they do freeze. Most mushrooms can be frozen and thaw out just fine. That is an option for longer term storage. 

    Mushrooms can also be dehydrated for long term storage.
