The King Blue Oyster is a hybrid made by crossing Blue Oyster with King Oyster mushrooms strains. The result was a strain with large wide caps and short, but fat, stems. The stems are a much more edible texture than regular Blue Oysters and the flavor profile is similar. This is a prefect mushroom option for chefs, due to the low stem waste.

  • Mushrooms need to be able to "breathe" so that they stay fresh. All mushrooms should be stored in the paper bag or cardboard container you receive them in. If you need to separate into smaller amounts, use an open plastic container and put a double layer of paper towels on the top and bottom of the mushrooms.

    They should be stored in the crisper drawer or as close to the bottom of your refrigerator as you can. They may freeze on the upper shelves.

    Don't worry if they do freeze. Most mushrooms can be frozen and thaw out just fine. That is an option for longer term storage. 

    Mushrooms can also be dehydrated for long term storage.
