The Cool Touch Oyster strain is a hybrid between a white oyster and a blue oyster. The result is this beautiful blue mushroom that fades to whitish gray with a light blue ring around the edge of the cap as it matures. These mushrooms have a delicious flavor, similar to that of other Oyster varieties. They add a nice umami flavor to any dish.
Cool Touch Oyster Mushrooms
Mushrooms need to be able to "breathe" so that they stay fresh. All mushrooms should be stored in the paper bag or cardboard container you receive them in. If you need to separate into smaller amounts, use an open plastic container and put a double layer of paper towels on the top and bottom of the mushrooms.
They should be stored in the crisper drawer or as close to the bottom of your refrigerator as you can. They may freeze on the upper shelves.
Don't worry if they do freeze. Most mushrooms can be frozen and thaw out just fine. That is an option for longer term storage.
Mushrooms can also be dehydrated for long term storage.
